Crock Pot Chicken Marinara Sauce
I started with my wife's marinara. It bursts with sweet tomato taste due to the paste that is used. Add some skinless boneless chicken breast and you have a healthy low fat Italian family feast.
Rating
A strong 4.
Notes: I put in a option for some crushed red pepper. I don't do it this time but it would add that touch of heat. The chicken can be left whole, cut into serving sizes or about 1 hour before the end, removed and shredded and placed back if you wish.
Rinse, dry and trim 3 skinless boneless chicken breast (1 1/2 to 2 pounds). If you want, cut into serving size pieces.
Dice a medium onion.
To a medium to larger crock pot (this is 3.5 quart) add 3 - 6 oz cans of tomato paste and an equal amount of water. 1 - 14 oz can of diced tomatoes. 4 t dry basal, 1 t salt, 1/2 t pepper. Crush 3 cloves of garlic and the onion. Add 1/4 t crushed red pepper if you want a little heat. Mix well.
Add chicken and push down to cover.
Cook on low for 6 hours. If you like your chicken shredded, remove the breasts about 1 hour before the end, shred and place back in for the last hour.

I like the idea of shredding the chicken since I would want to put this with pasta and it just mixes better that way.
