Garlic Mashed Cauliflower

This is a replacement for potatoes. If you want low carb for whatever reason, this is for you. I can't tell it from real garlic mash potatoes, and really good ones at that. A good and very healthy side dish.Well maybe you should cut the butter a little to call it healthy.

Time: about 10 minutes

Tools: full size food processor

Ingredients:
1 lb frozen cauliflower (This is the normal size bag)
1 T sour cream
3 T butter unsalted
1 T minced garlic
1/2 t salt
1/4 t pepper
1/2 t chicken base or bullion

Instructions:
1) Place cauliflower in a covered dish, add 1-2 T water and microwave on high until well cooked not just warmed. About 6 minutes on high.
2) While cauliflower is cooking, put all remaining ingredients in the large food processor.

3) Place hot cauliflower in the processor and puree. Open and check occasionally to be sure the stems are incorporated.

4) Serve hot.
