Easy Chicken Salad

A very tasty lunch for the busy holiday season. Your eating in 10 minutes with minimal work. Sometime you will need a fast lunch on the run and this was one of those days. I had forgot to plan for lunch. I had no supplies. So to the pantry was raided. I emerged with a can of chicken. How odd...

Inspired by Martha Stewart's Classic Chicken Salad with a few minor changes

An odd rating considering it came from a can but really the can had no effect on the outcome. I will need to keep some of this around.

Notes:
Any chicken should do as long as it is a little chunky. Actually the canned chicken was a little to chunky and I broke it apart a little. I got a cup and a half from the 13 oz can of chicken. AND it was tasty. Who would have thunk it...

 Any chicken will do as long as it is chunky. Dice1 stalk of celery and half a small red onion finely.
Combine 1 1/2 cup diced chicken, 1/4 cup mayo, 1/2 small red onion diced, 1 stalk celery diced, 1/2 t parsley, 2 t lemon juice, 1/2 t Dijon mustard, 1/2 t salt, and 1/4 t pepper.
 Mix well and serve on a sandwich, salad or in a wrap.

  • 2 t lemon juice
  • 1/2 small red onion diced small
  • 1 stalk celery stalk diced small
  • 1/2 t parsley dry
  • 1/2 t Dijon mustard
  • 1/2 t salt
  • 1/4 t pepper
Instructions

This is how I like mine. I don't enjoy the ones that have grapes, apple, and/or nuts in them. I guess that's just because this is how my mom made it, without all the frills.
