Grilled BBQ Zucchini
The idea is from Mark Bittman's Today program appearance a few weeks ago. It is just a simple grilling of some sliced up zucchini but the BBQ sauce browns up some and will give some extra taste. I usually am a little zucchini adverse preferring in mixed in with other veggies with mixed grilling or making bread or something else out of it. But this works.
Rating
Some where in the middle of the pack. If you are a zucchini person, give it try.
Notes: smaller, firm zucchini will work best for this. You are not cooking to a "done" wimpy zucchini. You want it firm with some browning.
Very simple ingredients. Preheat grill to medium low with a surface temp of 350-400.
Clean and quarter the zucchini trimming off the ends.
Give all sides a nice brushing of your favorite BBQ sauce.
Place on the preheated, cleaned and oiled grill.
Every 3 minutes, rotate the zucchini and brush again with sauce.
Done in 9 minutes.

- 2 smaller zucchini
- 2-3 T BBQ sauce

It's easy to overcook zucchini too. It goes from "still too firm" to "perfect" and then right on into "mush". And if I don't eat it hot right off the grill, I don't care for it.
