Green Beans with Bacon and Onions

Another green bean recipe. I like this one for several reasons. First the beans can be cooked ahead and saved for several hours. You then finish up starting 12-15 minutes before serving. Second IT HAS BACON ! This is mostly a CI recipe except I added some M-salt. This is a garlic - salty seasoning sold locally in west Michigan by friends of the family.

Tools: nothing special

Ingredients:
1 lb green beans cleaned and trimmed
4 slices bacon cut into 1/2 inch pieces
1 medium onion minced
3 T fresh minced parsley leaves
salt, pepper and M-Salt if you want

Instructions:
1) Boil 2 1/2 qt water with 1 tsp table salt. Add beans and cook for 5 minutes.
2) Drain and set aside for several hours.

3) About 15 minutes before time to serve, heat large skillet over medium high heat. Fry bacon until crisp about 5 minutes. Remove and drain bacon. Leave about 2 T bacon fat in the pain.
4) Add onion and saute until soft. 4-5 minutes.
5) Add beans and parsley. Stir repeatedly for 2-3 minutes..
6) Move to serving dish. Season with M-Salt and pepper. Add bacon on top.
