Quick Buttermilk Drop Biscuits

So you are making dinner but don't have much. A meat and veggie but nothing else. No decent bread. The home made French bread turned green yesterday... what to do. Biscuits of course. That was part of my downfall for years and I broke the habit with a low carb diet for the last several years. Now that I'm more liberal with carbs, this little suckers could be my downfall again. Oh so wonderful.

My previous version of drop biscuits had a fair rise but nothing like this. I have read many recipes over the years on drop biscuits. Some requiring hours of work. It is just a biscuit for heavens sake. I want to just wipe this out in the few minutes I have while cooking other things.


The best rise I've had was on the chicken pot pie from several weeks ago. I adopted it to this recipe. No rolling out. No cutting. Just mix and bake.

Tools: Nothing special

Ingredients: Makes six large biscuits scale to your needs.
1 1/2 c All purpose flour
3 T unsalted butter
1 t Dual action baking powder
1 t salt
1/4 t baking soda
1 egg
3/4 to 1 cup buttermilk. ( substitute with 1 cup milk warm plus 1 T white vinegar; Mix well and let set 5 minutes)

Instructions:
1) Preheat oven to 425 convection.
2) Mix all dry ingredients well in large bowl.

3) Mince butter and cut in with large fork
4) Wait until 20 minutes before need. Then Pam baking sheet.
5) Add egg. Then mix in the buttermilk. Add 1/2 cup to begin with then add more as mixing to make moist dough that will still hold it's shape. Work quickly, the milk and baking soda can thicken it quickly.

6) Make six drop biscuits and bake until golden brown. About 15 minutes.
