Blackened Grilled Skinless Boneless Chicken Breasts
A classic blackened taste in a simple and quick recipe for two.
I have a "possible posts" folder in my bookmarks for recipes that I stumble across and want to consider doing later. It has grown and now has over 100 links. About half are recipes or variations of recipes I have done. Some I'm no longer interested in. This morning I started to weed. The second recipe was this one and has probably been there for 6 months.
The recipe is an oven based recipe from allrecipes.com. I converted to the grill.

My wife wanted some garlic so I'll add that next time. I like the taste and had some left over Alabama White BBQ sauce left over and it was great on it.
Notes: Easily scalable to any amount.
Tools: clean gas grill
Ingredients:
2 skinless boneless chicken breast
1/2 t paprika
1/8 t salt
1/4 t cayenne pepper
1/4 t cumin
1/4 t thyme
1/8 t white pepper
1/8 t onion powder
Instructions:
1) Preheat grill on high. Clean and oil.
2) Trim breasts well.
3) Mix all dry ingredients
4) Rub dry mix on breast front and back.
5) Turn heat down to medium and place breasts on smooth side down for 5 minutes then flip every 5 minutes until internal temp is 165. About 25-30 minutes.

I know your feelings, my "to try" queue is about 1 light year long.
It seems impossible to weed the darn thing and it just grows and grows. Just more fun to be had.
I'm always looking for new variations on grilled chicken. Thanks for the seasoning idea.
