Microwave Sweet Potato Chips

It's a fashionable chip. It has it all... First, it is sweet potato. Sweet potatoes seem to be the new health food rage. Everyone seems to love them. Second, they are low fat and somewhat good for you. Last, they are microwave easy and very tasty.

Sweet potatoes seem to be "on fire". Many restaurants have added sweet potato fries to their menus. And more and more articles and recipes are appearing. So I jumped in and went for it. The results are quite nice. A different taste and perfect for you sweet potato fans.

I did microwave chips from russet potatoes a few weeks ago and a comment from Chris at Nibble Me This suggested sweet potatoes. Well, I went on vacation shortly after that and forgot about it. However, just in casual reading, I ran into two articles on microwave sweet potato chips. It had to be.

I'm not a "sweet potato guy". I have never been the first to say "pass the sweet potatoes please". Over the years I have become a mild fan.  I actually liked these.

Rating
It is a 3 since I'm an old fuddy duddy... I like potatoes to be potatoes. I will do this occasional for a change of pace. It would be much higher rated for you sweet potato people.

Notes: A lot of various flavoring out there for these. There are suggestions for brown sugar. That one sounds interesting to me. Other spices like cinnamon, nutmeg and many others. Google is your friend here if you want or just experiment.
Next, there is a fine line between not quite done and not crispy vs done and crispy vs burnt. Since all microwaves are a little different and thickness of your cut will effect cooking time, a little experimenting is suggested.


 Peal your sweet potato.
Cut on the thinnest setting on your mandolin. If you have crazy ninja knife skills, you can do this by hand but wash off any blood from cutting yourself.
Cut a piece of parchment paper to fit your microwave turntable (Or fold the corners under if you're lazy). Give it a light spray of PAM.
  Spread the chips on the paper not overlapping. Give them a light spray of PAM.
A light salting. Or the seasoning of your choice. Microwave on high until nicely brown. About 5 minutes.
 Not quite done. These will not be crispy.
