It's a fashionable chip. It has it all... First, it is sweet potato. Sweet potatoes seem to be the new health food rage. Everyone seems to love them. Second, they are low fat and somewhat good for you. Last, they are microwave easy and very tasty.

Sweet potatoes seem to be "on fire". Many restaurants have added sweet potato fries to their menus. And more and more articles and recipes are appearing. So I jumped in and went for it. The results are quite nice. A different taste and perfect for you sweet potato fans.

I did microwave chips from russet potatoes a few weeks ago and a comment from Chris at Nibble Me This suggested sweet potatoes. Well, I went on vacation shortly after that and forgot about it. However, just in casual reading, I ran into two articles on microwave sweet potato chips. It had to be.

Healthy Microwave Potato Chips

An amazingly simple, tasty and crispy chip. You just slice a potato up and microwave it. What could be easier? You control the oil and salt. Make it a "healthy potato chip" if you want. Make just a few or make a lot. Flavor them up or just a little salt. And lastly, cheap to make.

I stumbled on this somewhere and had some serious doubts as did my wife. But it works great. I have read so many versions, I can't give an inspired by credit. There are many variations. The cooking times recommended varied from 4 minutes to 10 minutes. Some cooked on high then flipped the chips and continued to cook on 50%. One even stepped it down a few more times. Some soaked the chips and some didn't. You get the idea...

Crispy... Tasty... Simple... Some of my favorite words. My type of recipe. An easy potato side dish that will become one of your all time favorites.

The basic idea is to boil some smaller potatoes in salt water until soft. About 30 minutes. Smash them on a oiled pan, top with oil, salt, pepper and anything else you want. Then bake them at a relatively high temp until browning  and crunchy. About 20 minutes. Your basic 2/10 skill level.

Grilled French Fries

I ask you why not? French fries and the grill... what could be more American than fries on the grill especially on a Fourth of July Weekend. There are only a few instructions out there and they vary a lot. So I always like to experiment and this is the 5th try in 2 weeks and I now have it right. They are not your basic fast food tasting fry. They are a cross between a fast food fry and a hash brown. And a great reason to buy that 10 or 12 inch cast iron pan you have though about. The important point about getting this right.
  • Do thin fries-They need to cook completely on the grill. 
  • They go on raw not precooked. I tried to varying amount of precooking and they became too weak to work with.
  • Wash them after cutting. The starch will stick them together.
  • Rotate the pan every time you touch the fries. Hot spots will do you in.
  • Keep you hands off a lot more than you want. You will just break them up.
  • A well seasoned cast iron pan is almost a must.

An easy side for grilling season. You can fix this after your meat goes on the grill. About 20 minutes total time. The concept is easy. Cut the potatoes into quarters. Microwave enough to mostly cook the potatoes on wooded skewers. Oil with spray, sprinkle with salt and pepper. Then finish cooking on the grill.
