Simple Garlic Beef Kabobs

Another KISS recipe. I wanted to do some kabobs but my search for a recipe was at best frustrating. Most have 10 plus ingredients listed and involved overnight timing. What is wrong with these people? So after reading 15 plus recipes, I modified my Applebee's Bourbon Street Sirloin recipe. 

My desires:
1) KISS with only a few ingredients. I used four.
2) Quick. I marinaded for 2 hours but I think anywhere from 30 minutes to 4 hours would be fine.
3) Great taste and tender. Yep it was.

Posting Slow Down

As I have mentioned before, the fall will be busy. In addition to new students and lectures, we are implementing EMR (Electronic Medical Records) in my pediatric practice. I have spent 6 hours since I got home last night on EMR and I have several hundred hours more of work I need to get done in the next 4 weeks on EMR alone in addition to work and lectures.  Experimenting with recipes and posting will take a back seat for a while. There will hopefully still be several posts a week just to give me a mental break.

Cracked Pepper Garlic Grill Skinless Boneless Chicken Breast

For a real pepper and garlic lover... my wife.


I knew what I wanted but really couldn't find it. I have several lemon chicken breast recipes posted already including one of our all time favorites. I want pepper, pepper and more pepper with a some garlic and no lemon. I couldn't find it but got some ideas from reading a lot of recipes. I would use nonfat yogurt for the base. I would add some extra chicken flavor with some chicken base. And last and most important, lots of cracked pepper with some garlic.

This is a recipe to take to a party and brag you did it yourself. This has been on my to do list for a long time and the first Saturday of college football is a good reason.

A fresh tomato salsa is mandatory at all tailgating, most picnics and all Mexican meals. Really it's not hard, just a lot of knife work.

This is a simple post but follows the principles of Cooking for Two... simple with excellent taste for two. Also, if I don't write it down or post it, I'll forget how I did it and be unable to repeat it.

We do an occasional ham steak. Just about the right amount of meat for two. And it will set in the refrigerator for several weeks while waiting for your need for that simple quick meal. I have in the past just oiled the grill and cooked until I have some nice grate marks. I was happy with this method, a nice taste but a bit dry and a little chewy.
