Oven Baked Mayonnaise Parmesan Chicken

So what is better than one Paula Deen recipe? Well the answer is two Paula Deen recipes. And neither one had butter. Amazing.

I started with an oven fried chicken recipe. The topping looked good but she used mustard as the base. But I'm not a mustard person. I though of using mayo. I searched a little and found another recipe. Also a Paula Dean for an oven baked chicken with a spicy mayo base. I of course did a little modification. She would not recognize them but we have a very tasty and easy baked chicken that is company ready but weekday simple.

Chicken for a hundred

Ok, it is not Cooking For Two but still useful. This is something you can do and it really wasn't that hard. We were hosting a large retirement party for several family friends. It was a pot luck type affair but we felt we should provide a "main course" of meat. 

So my "what I wanted" list:
1) Not to make anyone sick. Any type of "mass cooking" can easily lead to food poisoning. Well, not at my house!
2) Not too much work. There was a lot of other things that needed attention also.
3) Had to have good taste and be able to be kept warm.

This is a good one folks. You get a 5 rating with about less than 10 minutes of work (5 minutes if you're quick). It's got garlic. It's got spice. It's got crunch. And almost not work. And lastly, it's got loads of tasty goodness.


An oven based recipe since I really didn't have the time to pay attention to the grill today. I REALLY needed the make it, bake it and eat it thing tonight. And those chicken breasts needed to go.

Crispy Garlic Grilled Bone-in Skin-on (Split) Chicken Breast

Some of my wife's favorite words: crispy, garlic and chicken. I threw in some of my favorite words: quick, easy, tasty and grilled. I rolled it all into one and made her (and me) happy.

I saw this trick on ATK last season and wanted to apply it somewhere. They used a salt and baking powder rub to essentially dry out chicken skin so it would crisp up better and it also enhanced the taste. Their recipe is for oven roasted and used a 24 hour wait. I wanted to grill and after some thought, decided to do one hour for the chemical and osmotic reaction would do and with excellent results. Grilled Paprika-Garlic  Bone-in Skin-on (Split) Chicken Breast for Two from 101 Cookng For Two
What to do with those bone-in skin-on chicken breast (AKA split chicken breast)? I usually buy then with no specific plans. Then I end up freezing all or some of them. So I set out to change that.


What I wanted to do:
1) I wanted a KISS (keep it simple stupid) recipe. As little fuss as possible so no rub that has 8 or 9 components. Check.
2) Quick. I want to start the gas grill to preheat and then do the prep and start grilling. No brining. No 2 hours in the frig after the rub. Check.
3) Truly a "For Two" recipe. I'm not cooking for left overs because it is so simple I won't mine doing it over and over. Check.
4) Use common kitchen components and a scalable recipe you can use for the family. Check.
5) Lastly, I wanted skin that was crispy and had great taste. Check.

Simple Roast Bone-in Skin-on (Split) Chicken Breast

Sometime you just want simple. Minimal fuss and muss. I had no specific plans when I to the store to pick up a prescription and get something for dinner. Nothing struck me as the next post or even anything I really wanted to fuss with. I grabbed the 99 cents/lb chicken breasts ($3.34 for three). I was tired of breading things so the skin on would keep it moist. So home to find a recipe that would be simple or just do it myself. The search of CI site lead to a simple recipe. Yes, they do have some. I of course added more garlic but otherwise followed the recipe
