Mexican Shredded Chicken in a Crock Pot from 101 Cooking For Two
Great in tacos or anywhere you would use Mexican shredded chicken. A chicken taco salad. Chicken burritos or enchiladas. My wife is planning a Mexican buffet with this as a featured component.

Start with some skinless boneless chicken breast and cook in a slow cooker in spiced up salsa until it falls apart. Shred and add some sour cream, corn and black beans.

Easy General Tso Chicken

Easy General Tso Chicken from 101 Cooking For Two
Quick, easy and tasty. My absolute favorite Chinese dish. This is now a weeknight 30 minute recipe. And as an extra bonus, this version is much healthier.

I have been working on this for almost a month. I started with an American Test Kitchen version. It was an absolute disaster. Yes, I do have those. Over one hour of hard cooking. I created the biggest mess I have ever made in the kitchen. Plus I hated it. Way too much vinegar and just otherwise not outstanding. With that much work, it needs to be great. I was very disappointed. My wife was likewise unimpressed. It went down the sink.

Healthy Crock Pot Chicken Vegetable Soup

A wonderfully tasty and healthy slow cooker soup for the colder days to come that's chucked full of veggie goodness with a little extra sweetness due to white corn. Plus it's slow cooker easy.

Somewhat inspired by a cooks.com recipe with only a few minor changes. The biggest change was from the white corn that added a lot of extra sweetness.

Microwave Sweet Potato Chips

It's a fashionable chip. It has it all... First, it is sweet potato. Sweet potatoes seem to be the new health food rage. Everyone seems to love them. Second, they are low fat and somewhat good for you. Last, they are microwave easy and very tasty.

Sweet potatoes seem to be "on fire". Many restaurants have added sweet potato fries to their menus. And more and more articles and recipes are appearing. So I jumped in and went for it. The results are quite nice. A different taste and perfect for you sweet potato fans.

I did microwave chips from russet potatoes a few weeks ago and a comment from Chris at Nibble Me This suggested sweet potatoes. Well, I went on vacation shortly after that and forgot about it. However, just in casual reading, I ran into two articles on microwave sweet potato chips. It had to be.
