Crock Pot Pulled Pork Loin

Use it for BBQ, use it for Mexican or anywhere you wand a moist and tasty shredded pork. Healthy and low fat "pulled" pork from a pork loin using a slow cooker. An almost no work recipe.

I love pork but generally pork loin is way too lean for shredding but cooking it in a spiced up braising liquid and then adding some back for moisture will get you what you want. I modified my own oven based shredded pork loin recipe. I'm giving you two options.  One for BBQ and one for Mexican.

BBQ Shredded Pork Loin in the Oven

Lean, healthy and tasty. A shredded pork from loin for a few or for masses. Cut the recipe down or triple it as needed. Cook ahead or freeze. Some would call this "pulled pork" but I call it shredded saving the term pulled for that grilling masterpiece.

Grilled BBQ Pork Chops

It's "clean out the freezer" week and a great tasting health barbequed pork chop is the result.

Start with two slices of boneless pork loin cut about 1 inch thick. Brine in a brown sugar/salt solution to prevent that "dry" pork thing. Baste with your favorite BBQ sauce for just the right flavor. Cook over high heat for speed but not so much to dry out. And you get moist, tender, tasty and easy - all in a low fat meal.

Pan Seared Oven Roasted Pork Chops from Loin from 101 Cooking For Two
Simple, moist, and tasty are all good words. In cooking I love these words and here they are all in one place.


This is what I now call a "pork chop" which is probably not quite technically correct. Its a slice of a boneless pork loin. I think others may call it a "pork loin chop" but use the cut you want. I like this for several reasons. First it is very lean (read healthy) if trimmed. Second I buy a whole pork loin and cut it as thick as I want easily, freezes great and great for other things like my Mexican shredded pork. I like to cut mine about 1 inch thick to cook well but still be moist.

Best Mexican Shredded Pork Loin

There is something special about pork in Mexican food. It just seems right. Don't get me wrong because chicken and beef are great. But pork is just soooo right.

I was going to try a pork shoulder but really I don't like dealing with that much fat. I know it is suppose to add flavor but I reallllly don't like fat. I regressed to one of my favorite recipes that I have been using for the last 3 years. Plus whole pork loins were on sell for $1.79 so why not.
