Texas Crock Pot Chili

Texas Chili... What is it? Well it could be any chili cooked in Texas or by a Texan but the consensus seems to be a beef chili with no beans. I will go with that...

I have been home alone for 6 weeks due to a family emergency so I'm "cooking for one". Plus I'm working 12 hour days. So I'm doing my cooking in chunks with left overs for heating up in the evening. I trying to avoid the "I'm hungry and have nothing at home so let's hit the drive-thru" syndrome. This all spells "Crock Pot" to me so this blog may look like a crockpot blog for a while.

Healthy Crockpot White Bean Chili Spiced Up

You could say a lot about this chili. You could call it healthy, low fat, and low glycemic. I'm will just call it excellent.

I have always loved white bean in soups or chili and slow cooker chili fits my current life style.  It is just the right thing. One of my favorite chilies uses pepper jack cheese and salsa for spicing. I want to control the spicing and get the cheese out of the recipe.

Healthy Southwest Chicken Chili

I call this a dump recipe, because you dump it in and go do something else until it's done.

I'm home alone for a few days and will be working late so dinner is either drive-thru or left overs. I choose left overs and what's better to warm up then chili. We are starting a new diet and I'm going with a low glycemic diet and low fat. So some chicken, beans and lots of taste. Baked in a dutch oven for several hours for simplicity. The results, really nice.

Crockpot Southwest Pork Tenderloin Chili - A Low Fat Wonderful Thing

I have always said that pork and Mexican are made to go together. Well, I just proved it again. With only 10 minutes of prep, a crock pot and 8 hours, you can have a very healthy wonderful taste meal.

With only about 3-4 grams of fat per serving this will fit any diet. But I don't want you to think of this as a diet dish. This will blow any other chili out of the water on taste.

Super Bowl Week - Red Chili


I have been asked several time recently for my chili recipes. I don't have any specific plans to make any soon so no pictures for now but I will edit the post with pictures when I have them.  I assure you they are well tested.

Second up is the red chili recipe.

For many years I used Carl Shelby Chili Mix with what I felt was great success. It was one of those follow the directions on the bag and be brave and change it a little. Well as things happen, the mix became unavailable locally for almost a year and then came back but by then, I created my own version by trial and error. I liked it better anyways.

I know the amount of chili powder looks excessive but it is correct.
The "heat" of this is somewhere around a 4 out of 10. You may increase or decrease the cayenne pepper according to your "heat" taste.

Tools: Large slow cooker

Ingredients ( this is a double batch...freezes well or cut in half)

4 pounds Ground beef - low fat is better so you will have less fat to skim
1 15 oz can tomato sauce and one can of water
1 can diced tomatoes
2 cans light kidney beans
4 medium onions chopped
2 T oil
1 bell pepper chopped (optional)
4 cloves crushed garlic
1 T oregano
1 t paprika
2 t salt
1 t pepper
8 T (1/2 cup) chili powder
1 t Cayenne pepper
extra water to make right consistency- may need 1-2 cups

Instructions:
1)  Large skillet over medium high heat. Add 2 T oil then add onion and cook until transparent (about 4 minutes).
2) Add ground beef. Break up with wooden spoon and then brown meat.
3) Remove all extra fluid and fat. Place meat and onion mixture in the Crock pot.
4) Add all remaining ingredients.
5) Cook on low for 3-4 hours with lid on. Stir frequently
